easy granola


My Mom thought I should post this recipe that Autumn & I like a lot. It is easy (hence the name) and tastes great with yogurt or milk, but my favorite way to eat it is to pour it over fruit (blueberries, canned peaches, frozen berries) and microwave it for 30 seconds…fruit crisp for breakfast!

Easy Granola:
Preheat oven to 375. Microwave together liquid ingredients (about 30 seconds):

½ cup butter
½ cup brown sugar
½ cup honey
Stir together and add 1 tsp. Vanilla.

Mix dry ingredients in a large bowl:
6 cups oatmeal (I like the large old-fashioned oats)
½ tsp cinnamon
Pinch of salt
½ cup add-ins: ground flax, milk powder, dried fruit, sunflower seeds…anything!

Stir your liquid ingredients into your dry until all the oats are coated, then spread in a greased 9x13 pan. Bake for 10 minutes, take it out and stir it well. Turn your oven off, put the pan back in the oven and leave it overnight, or all morning.
